Salad? For Breakfast? I never used to think that was a good idea. I’d see paleo bloggers from all over saying what a great idea it was, you could start your veggies with the first meal of the day, blah blah freaking blah. Give me my breakfast hash any day of the week.
I’m not one of them, but I hear people can get pretty tired of eggs. Not me. I eat eggs every single morning. Sometimes they’re fried, sometimes they’re scrambled, sometimes they’re hard boiled… feeling a little like Bubba right now. Point is, eggs are delicious. I’ll switch up the veggies and the seasonings in my Paleo Breakfast Hash to keep it fresh, but eggs are a must.
The oven had caught on fire, rendering it useless. I’ve already told the story on another post so I won’t bore you with the details of my mental breakdown again. Suffice it to say that I had no idea what I was going to make for breakfast since I couldn’t use the stove. No sauteed veggies, no eggs, nada. I would have been okay with some fruit and seeds, but there’s not much protein in that.
A few quick Google and You Tube searches taught me how to poach an egg in the microwave. As awful as that sounded, I just couldn’t think of anything else. Since sauteing my veggies was out of the question (and I was not about to stoop to trying to microwave them) this seemed like the perfect opportunity to try a Paleo Breakfast Salad. It turned out pretty darned good. You could use any veggies that you have, but since it was my first I was trying to keep it simple. The egg yolks were the only dressing I needed. Little fruit on the side, and you’ve got a great, almost no-cook breakfast.
